Lemon Herb Salmon & Vegetable Entree

This is a simple one pan baking entree. Start off by preparing your salmon by marinating it with lemon juice, lemon zest, salt, pepper, oregano and a touch of honey. Combine all ingredients in a plastic bag from a minimum of 30 minutes.
Drizzle a fair amount of olive oil onto your baking pan. Add all your washed and prepped vegetables, and evenly coat with oil, salt and pepper. I added a touch of paprika to the potatoes. Add your salmon and bake to 400ºF for 15-20 minutes.

My famous rosemary nut topping recipe is a hit amongst my Italian family members. Start
by combining almonds, walnuts, cashews, pecans, and pine nuts into a food processor until it turns into an even crumb.
Then in a separate frying pan, drizzle olive oil until hot then add garlic and rosemary until golden brown. Add your nut mix and cook on medium heat for about 5 minutes.
Assemble all ingredients of your salad and garnish with the nut mix.

Green Vegetable Quinoa Salad Bowl

Drizzle a fair amount of oil into sauté pan and start by cooking onion until golden brown. Add your broccoli, asparagus, and mushroom. Season with salt and pepper. Cover pan with a lid, reduce heat to low and cook for 20 minutes or until vegetables are cooked to your liking.

Pumpkin & Honey Nut Squash Soup

Begin ​by peeling a whole pumpkin and honey nut squash. Cut into cubes and set aside. Grab a sauce pot and drizzle oil. Add your onion and garlic until golden. Then add you chicken stock until it begins boiling. Add the rest of your ingredients including sage, rosemary, and touch 0f nutmeg. Close lid and reduce heat to low and simmer for about 35-45 minuets. Test if your pumpkin is fully kicked, then add all ingredients into a blender to give the perfect soup recipe.
Garnish with croutons and heavy whipping cream.

Roasted Cauliflower with Adobo Chipotle Sauce

2 chipotle peppers marinated in adobo sauce

Begin by preparing your cauliflower by washing and cutting evenly. Coat with olive oil, salt, pepper, and lemon juice. Lay evenly onto a baking sheet pan and bake in 375ºF for 30-35 minutes. Flip Occasionally for an even roast.
While cauliflower is baking, begin preparing your dipping sauce. Incorporate all ingredients and blend until smooth.

Light & Fluffy Banana Pancakes

Start by mashing your banana, then add all your wet ingredients into a mixing bowl. Then add your sifted flour, salt, sugar and baking powder until all ingredients are well incorporated.
In a medium sauce pan, coat with butter and begin by cooking your pancakes on medium heat for about 2 minutes on each side until nice and golden brown. Serve with choice of fruit and enjoy!

Sweet Potato Eggs Benedict

Start by evenly slicing your sweet potato and season with oil salt and pepper. Bake in the oven for in 350ºF for 15-20 minutes. In a separate pot bring water to a boil, season with salt and begin pouching your eggs.
To make the hollandaise sauce, combine eggs, melted butter and a pinch of salt to blender.
Assemble all your ingredients together and garnish with parsley and paprika.

Recipe was made in Italy with only the purest of ingredients. I hand made the dough but with no roller in site. I had to improvise where I then used a wine bottle to evenly roll out my dough. Simple kitchen hack discovered!
Overall I combined 2 recipes to make a zesty, sweet and creamy apple pie filling.

This is recipe is super quick, light and delicious. Start by evenly cutting your cucumber. Prepare your sauce with a spoonful of sour cream, cream cheese and a touch of lemon juice. Finely chop your dill and add to the dressing. Begin your assembly with cucumber, then dill cream. salmon. Garnish with a touch of more cream and dill leaf.
